Neither style is simply "better" — they are built around different trade-offs. Japanese-steel knives are harder (typically 60–61 HRC), thinner and ground to a finer angle, so they cut with less resistance and stay sharp longer. European knives are softer (roughly 56–58 HRC), thicker and more forgiving of rough treatment. If you value a clean, precise cut and you will look after the knife, go Japanese. If your knives get chucked in a drawer and used on bone, go European.

Ask which is better and you will get a strong opinion either way. The useful answer is that the two traditions optimise for different things, and knowing which trade-off you actually want makes the choice straightforward.

One point of terminology before we start: the knives we sell are made from Japanese steels such as VG10 and AUS-10, in the Japanese tradition of thin, hard, double-bevel blades. We describe them as Japanese-steel knives rather than claiming they are forged in Japan.

Steel and hardness

Hardness is measured on the Rockwell C scale, and it is the single biggest difference between the two traditions. A European kitchen knife typically lands somewhere around 56–58 HRC; a Japanese-steel knife around 60–61 HRC.

It is worth being blunt about what that does and does not mean. Harder is not the same as better. It is a trade-off, and it runs in both directions:

  • Harder steel holds a fine edge for longer. That is the real, everyday benefit — you sharpen a few times a year rather than every few weeks.
  • Harder steel is less tough. Under a hard knock, a hard edge chips where a softer edge would roll. A rolled edge you can straighten on a honing rod in seconds; a chip needs grinding out on a stone.
  • Harder steel takes a little more work to re-sharpen — but it also takes a keener edge when you do.

The claim you will sometimes read, that Damascus knives are harder than stainless ones, is a confusion. "Damascus" describes layered cladding around a core steel, not a grade of steel; the hardness comes from the core — VG10 or AUS-10 in our range. German steel vs Japanese steel: what is actually in the blade

Both traditions use stainless steel. The difference is what the alloy is tuned for.

German steel in kitchen knives is usually a chromium-molybdenum-vanadium stainless — X50CrMoV15 is the classic example — with a moderate carbon content. It is deliberately formulated to be tough and easy to work: it takes a serviceable edge quickly, resists chipping, and is very forgiving of a heavy hand. It is not trying to be hard, and it hardens to roughly 56–58 HRC.

Japanese steel in this class means higher-carbon stainless grades such as VG10 and AUS-10, often with cobalt or extra vanadium in the mix. More carbon and more carbide-forming elements mean the steel can be hardened further and hold a much finer edge — but the same chemistry is what makes it less tolerant of a knock.

So "German steel vs Japanese steel" is not a quality contest. It is toughness and convenience on one side, hardness and edge quality on the other, and the manufacturers on both sides are hitting the target they aimed at. Worth adding: heat treatment matters as much as the alloy name on the box. A well-treated German knife will out-perform a badly treated Japanese one every time, which is why we would rather talk about hardness numbers than steel codes.

Geometry and edge angle

The second difference is geometry, and it is the one you feel first.

A Japanese-steel blade is thinner behind the edge and ground to roughly 15 degrees per side, or about 30 degrees included. A European blade is thicker and usually ground to about 20 degrees per side, or 40 degrees included. Harder steel is what makes the finer angle possible — a soft blade taken that thin would deform.

In practice that thinner geometry means less wedging. A tomato skin gives immediately; a butternut squash does not fight back the same way; long slices come off in even sheets rather than tearing. It is also less tiring over a long prep session, which matters if you cook a lot.

The flip side is the profile. European chef's knives have more curve along the edge, which suits a rocking motion. Japanese blades are flatter, which suits a push-cut or a draw-cut. Sharpening follows from all of this. A finer angle on harder steel wants a whetstone rather than a pull-through sharpener, which grinds a blunter angle onto the blade and wears it out faster. That is a genuine commitment — and if you would rather not make it, that is a real argument for a European knife.

Handles

Japanese knives are traditionally fitted with a lightweight wooden handle, which shifts the balance forward into the blade. Many modern Japanese-style knives, including much of our range, use resin or pakkawood instead — pakkawood is timber impregnated with resin, so it looks like wood but shrugs off moisture.

European knives more often use a moulded synthetic handle with a heavy bolster, which puts the balance point at your hand. Neither is better; heavier feels reassuring to some people and dead to others.

What does matter, whichever you buy, is a full tang — steel running the whole length of the handle — and a shape that stays secure when your hands are wet.

So which should you buy?

Here is the honest split.

Buy a Japanese-steel knife if you enjoy prep, you want the cleanest cut you can get, you are happy to hand wash and dry your knives, and you are willing to learn a whetstone or send them out to be sharpened. The pay-off is a knife that cuts noticeably better and needs sharpening far less often.

Buy a European knife if your knives live in a drawer with everything else, they go through bones and frozen edges, they get put in the dishwasher, or several people in the house use them without much ceremony. A softer, thicker blade will survive that; a hard one will chip.
